How to make Gbegiri Soup

Ingredients

 

  • 150 grams of brown beans
  • 1 medium-sized smoked fish (Titus/Mackerel)
  • Dried pepper
  • Salt to taste
  • 1 cooking spoon of palm oil
  • 1 tablespoon of ground crayfish
  • Seasoning cubes

 

Instructions

  • Wash the beans thoroughly to remove the beans coat.
  • Soak the beans in water for about three hours. This will soften the beans and make it easier to cook.
  • Put the soaked beans into a medium-sized pot. Pour in enough water to cover the beans totally. Place the pot over medium heat and start cooking.
  • Cook the beans until it starts to melt when you mash it with your fingers. This should take about one hour to achieve.
  • When the beans is very soft, sift the water from it and allow the beans to cool for a few minutes.
  • Pour the beans into a blender and blend thoroughly until it forms a slightly thick and consistent paste.
  • Pour the beans paste into the pot and place the pot over medium heat.
  • Add the smoked fish, palm oil, crayfish and seasoning cubes.
  • Add salt to taste.
  • Allow the soup to boil until the oil changes from red to yellow.
  • Stir the soup from time to time to prevent it from burning.
  • Stir the soup one more time and allow it simmer for two minutes.
  • Remove your delicious Gbegiri soup from the heat and allow it to cool for a few minutes.

Serving

Gbegiri soup is usually served with Ewedu soup, and beef from your chicken or beef stew. Enjoy this delicacy with fufu, semolina, amala or any other Nigerian staple food.
