How to Make Moi Moi

- 1 1/2 cups of ground beans
- 1 Medium-sized onion (Chopped)
- Tatashe (Chopped)
- Ata rodo
- 1 tablespoon of ground crayfish
- 3 tablespoons of palm oil
- 3 tablespoons of melted butter (Optional)
- 4 eggs
- Seasoning cubes
- Salt to taste
- Blend the pepper and the onion together.
- Pour the pepper into the bowl containing the ground beans. Mix them together until you have a slightly smooth batter.
- Break two of the eggs and empty the contents into the batter.
- Mix the salt, palm oil, seasoning cubes and crayfish together. Add a little water to the mixture and pour it into the batter.
- Using a wooden spatula or electric mixer, mix the batter thoroughly until it becomes very smooth.
- Boil the remaining eggs. When they are done, peel the shells off and slice the eggs into small circles.
- Pour 4 cups of water into a large pot. Place the pot on medium heat and allow the water to boil. The pot should not be filled with water.
- If you are making use of loaf pans, rub a little oil inside each pan. Scoop five cooking spoons of batter into each pan.
- Put a few pieces of the sliced eggs into the pans containing the batter.
- Cover each pan, tightly, with aluminium foils.
- Place the batter-filled pans into the pot of boiling water; one after the other.
- Cook the batter for 45-60 minutes.
- When the Moi Moi is ready, remove the pans from the heat and allow them to cool.
You can also bake your Moi Moi. Simply pour the batter into cupcake pans. Fill your baking pan with water and place the cupcake pans inside the baking pan. Set the temperature to 350 degrees Fahrenheit. Bake the batter for about 30 minutes.
Moi Moi is usually eaten with a variety of dishes. It can be eaten with custard, pap or oats. Moi Moi is often served with rice; especially at parties and other social gatherings.
