EASY RECIPE FOR HOW TO MAKE ONE POT CHICKEN AND RICE

If you don’t like to wash different pots and pans to make a good meal, check out this simple recipe on how to make one-pot chicken and rice.

Ingredients

To Marinate the chicken, you will need the following ingredients:

  • ½ kg boneless chicken
  • ½ tsp salt
  • 2 tbsp plain yoghurt
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • ¼ tsp turmeric
  • ½ tsp red chilli

One-Pot Preparation Process

  • 1 tsp ghee (optional)
  • ½ cup sliced onion
  • Two bay leaves
  • 1 tsp salt
  • ½ tsp garam masala (optional)
  • ¼ tsp ginger paste
  • 1 cup hot water
  • 1 ½ cup-soaked basmati rice
  • 3 tbsp cooking oil
  • 1 ½ cup hot coconut milk
  • 1 ½ tbsp fresh coriander (optional)

Procedure for one-pot chicken and rice

  • First of all, Mix the chicken pieces with salt, yoghurt, ginger paste, garlic paste, turmeric, and red chilli
  • Place the chicken in a bowl and use saran wrap to cover it. After coating, leave it to marinate for 15 minutes
  • Next, put the chicken in a pot with cooking oil and cook until brown for about10-12 minutes on low-medium heat
  • Afterwards, remove the chicken pieces, add in the sliced onions, sprinkle some water, add in bay leaves, some ginger paste and rice that has been soaked for about 30 minutes
  • Pour some hot coconut milk and hot water into the pot along with the other ingredients
  • It’s time to put the chicken back into the pot
  • Let everything cook for 10-15 minutes on low-medium heat with the lid on
  • Sprinkle some garam masala, chopped coriander leaves, and ghee for extra flavour if you have them available
  • Stir one last time to be sure it’s cooked properly, if it’s not, then use a saran wrap to cover the pot before placing the lid over it. The food should cook on low heat to steam the rice, so it cooks evenly.
